Kitchari

Ingredients

2-3 portions

  • 1/2 cup rice

  • 1/2 onion, chopped

  • 2 garlic cloves, chopped

  • 2 tbsp coconut oil or ghee

  • 1/2 cup mung dhal

  • 1/2 tbsp of Nature’s Kitchen spice mix

Instructions

Start by frying the onion and garlic in your pot with the coconut oil for around 2 minutes. Then proceed to add the spice mix and continue to cook for 1 min.

Set the heat to medium and add the monk dhal and rice, stir well and add 6 cups of water. Continue to cook and stir occasionally until dhal is completely dissolved (20-30 minutes), let sit for 5 minutes and enjoy! So easy and so good!

Chickpea Curry

Ingredients

2 portions

  • 1/2 cup of chickpeas cooked or 1 can of Chickpeas (strained and thoroughly rinsed)

  • 1 can of Coconut Milk

  • 1 ⁄ 2 an Onion, chopped

  • 1 large Celery Stick, diced

  • 1 medium Carrot, diced

  • 2 Garlic Cloves chopped

  • 1 tbsp of Nature’s Kitchen spice mix,

  • Add Chili to taste

  • 1 tbsp of Coconut Oil

  • A handful of spinach (about 2 cubes when frozen)

  • 1/2 cup Brown/Wild Rice/Quinoa and a squeeze of lemon

Instructions

Put rice or quinoa to cook to packet instructions. Chop vegetables and thoroughly rinse your chickpeas. Saute your onion in a 1/2 tablespoon of coconut oil on a medium to high heat.

Add the garlic and mix it in with the diced celery and carrot. Add the turmeric, salt, pepper, our spice mix, chili (if desired) and stir well.

Then add the chickpeas and sautee for 1 min. Add the coconut milk to deglaze the pan and stir well. Let it simmer until it thickens. Add the spinach and cook for another 10 minutes. Turn the heat off and let sit for a few minutes.
